Overview
Wolfoods operates summer camp kitchens across the country between May - September. We are looking for an experienced, motivated, and capable FOOD SERVICE OPERATIONS DIRECTOR. THIS POSITION IS NOT LOCAL. You will be living abroad on-site for the term of the contract. All lead staff will live on site at the job location - Room, Board, & Travel Expense Assistance are provided. This is a hands-on and demanding position.
Responsibilities
- Execute the Wolfoods Camp Food Service Program flawlessly
- Create dishes for people with dietary restrictions; manage allergens with planning, recipe execution, and strict sanitation to avoid cross contamination
- Facilitate the duties and responsibilities of creating, implementing, and maintaining the Service & Culinary needs of the assigned camp
- Maintain clean and comfortable surroundings in a fast-paced environment; ensure correct service timing, food quantity, and food quality for all meal periods and special requests
- Communicate professionally with children, exchange students, front and back of house staff, directors, managers, counselors, leaders, specialists, and diners
- Act as primary contact liaison between the camp and the kitchen; attend relevant meetings and events; manage payroll; handle special requests; respond to camp leadership concerns
- Demonstrate initiative, leadership, hands-on self-reliance, and sound judgment
- Lead and train FOH dining personnel; provide ongoing feedback on standards and performance
- Collaborate with Head Chef and Camp Directors daily on all aspects of dining hall operation
- Attend related in-service training and staff meetings
- Ensure dining hall is open and prepared 15 minutes prior to service; implement a daily checklist system
- Follow Wolfoods environmental initiatives to minimize waste and conserve resources
- Know all menus and specifications; maintain adherence to dining hall standards; follow safety practices to minimize risk
- Manage inventory, place orders, and plan production to meet needs; oversee equipment maintenance to health standards
- Teach and enforce safety regulations; assist in menu development and tasting; participate in event-specific food preparation
- Act as Front of House supervisor if needed
- Lead in planning, scheduling, directing, and training; utilize cross-utilization and production planning
- Maintain accurate production timing, quantity, quality, and plating
- Monitor guest feedback and communicate with campers, staff, and parents
- Ensure compliance with health department sanitation standards and Wolfoods standards of service and quality
- Control inventory, place accurate food orders ahead of time, and manage overall kitchen workflow
- Account for special diets and multiple dietary needs; maintain relationships with camp leadership
- Lead in managing staff and client relations
Qualifications & Experience
- 4+ years Commercial Kitchen Experience in a Lead Role
- Minimum three professional references required with application submission
- Proficient in relevant skills relating to the specific role
- Quality-driven and self-motivated
- High level computer literacy
- Recognize and uphold Health Department Standards
- Able to both lead a team and take direction
- Minimum 6-day workweek (70 hours)
- Must live on-site in a rural setting with possible shared living spaces
- Must be able to stand for long periods; lift and carry up to 50 pounds; bend, stretch, and reach for extended periods
- Must be ServSafe Manager Certified
- Must possess ServSafe Allergens Certification before the start of camp (Company Sponsored)
- Ability to work under pressure in variable temperatures; able to cook from scratch
- Institutional and batch cooking experience is highly desired
