Reporting to the Head of F&B, this role provides leadership, stability, and operational continuity across Gravity Haus locations during times of transition, high demand, or leadership vacancies.

What You’ll Do

  • Lead and support property culinary teams across multiple locations, ensuring continuity and adherence to Gravity Haus culinary standards.
  • Execute daily kitchen operations — including menu planning, purchasing, vendor management, staffing, and training.
  • Cross‑train, mentor, and empower teams to elevate their technical skills, efficiency, and collaboration.

  • Oversee food safety, sanitation, and quality assurance — including temperature logs, storage rotation, and compliance with health codes.
  • Manage ordering, receiving, and inventory to control food and labor costs within budget parameters.
  • Analyze P & L statements and operational reports to make data‑driven decisions and drive profitability.
  • Partner with the Corporate Executive Chef and property leaders (GM, F&B Director, etc.) to refine and execute seasonal and local menus.
  • Ensure all recipes, training materials, and menu documentation remain current and accurately implemented.
  • Foster a positive, collaborative, and inclusive kitchen culture where team members feel valued and motivated.
  • Represent Gravity Haus as a brand ambassador — exemplifying our values, passion for the outdoors, and commitment to community.

Who You Are

  • Minimum 6 years of progressive culinary experience, including supervisory or management roles in resort, hotel, or upscale restaurant settings.
  • Proven success as an Executive Chef or Senior Sous Chef managing high‑volume operations.
  • Culinary degree or equivalent professional experience required.
  • Strong understanding of menu engineering, food costing, and budgeting.
  • Familiarity with Google Suite, POS/inventory and other industry‑specific technology platforms preferred.
  • A hands‑on culinary leader who can confidently run all stations in a high‑volume kitchen with technical precision and creativity.
  • Tech‑savvy and adaptable, able to learn and leverage culinary, operations, and reporting platforms.
  • A motivator and mentor who leads by example — developing teams through coaching, consistency, and accountability.
  • Calm, composed, and solutions‑oriented under pressure; able to balance strategy with execution in variable environments.
  • Fluent in English (Spanish a plus) with strong communication skills across all levels of the organization.
  • Highly organized with a deep understanding of inventory, cost management, and labor controls to meet financial goals.
  • Committed to excellence, sustainability, personal growth, and the Gravity Haus lifestyle.
